Soup season is my favorite!! We have soup at least once a week during the cooler months. This Vegetable Beef Ramen Soup got two thumbs up from us. It was so good and we LOVED the ramen noodles!!There are only 5 ingredients in this soup and it only takes about 20 minutes from start to finish. You seriously can’t beat that!! This has quickly become one of our favorite vegetable beef soups. We will be making this a lot during soup season.
How to Make Beef Ramen Vegetable Soup
This soup is super simple to make with only five simple ingredients. In a Dutch oven or large soup pot, cook ground beef over medium-high heat until no longer pink. Drain excess grease. Add V-8 vegetable juice to the pot. Use a wooden spoon to scrape any brown bits from the bottom of the pot. Stir in onion soup mix, beef ramen seasoning packet, and frozen mixed vegetables. Bring the pot to a boil. Reduce heat and simmer for 10 minutes. Bring the pot back to a boil and add ramen noodles. Cook until the noodles are tender.

- Can substitute ground turkey.
- I use a package of frozen veggies that include green beans, corn, carrots, and green peas.
- Feel free to add fresh onion, bell peppers, and canned tomatoes.
- Can I make the soup in the crock pot? Yes! Brown the beef and place it in the slow cooker. Add the vegetable juice, soup mix, seasoning packet, and frozen veggies. Cover and cook on LOW for 6-8 hours. Add the ramen noodles and cook until the noodles are tender.
- Store leftovers in an airtight container in the refrigerator.
- Reheat the soup in the microwave or the stove top.
- You may need to add some water or beef broth to the soup. The noodles will soak up some of the soup liquid.
What to Serve with Ground Beef Vegetable Soup
This is one of our all-time favorite homemade soups. It is so simple to make and it has the best flavor. We love to make a large pot of this soup on a chilly day. This is a hearty soup. You don’t need a lot of side dishes to go with it. We usually just serve it with some crusty bread or biscuits. Whip up a batch ASAP! I hope you enjoy it as much as we do.

- 1 lb lean ground beef
- 1 (46-oz) bottle V-8 Vegetable Juice
- 1 (1.35-oz) package onion soup mix
- 1 (3-oz) package beef ramen noodles, divided
- 1 (16-oz) package frozen mixed vegetables
Instructions:
In a Dutch oven, cook ground beef over medium heat until no longer pink. Drain.
Stir in V-8 juice, onion soup mix, seasoning packet from ramen noodles and frozen vegetables.
Bring to a boil. Reduce heat to low. Simmer uncovered for 10 minutes.
Return to a boil and add ramen noodles. Cook for 3 minutes.
